The Thorne & Daughters Copper Pot Pinot Noir 2024 thrills with a layered aroma of pomegranate, hibiscus, and raspberry coulis, accented by elegant notes of pine needles and wild herbs. On the palate, it presents a fresh and intricate profile, superbly balanced by harmonious acidity and fine tannins, further enhanced by hearty hints of red fruits and fennel. The finish is pleasantly dry, leaving a subtle trace of nutmeg and earthiness.

Treatment in the cellar The vinification process for Copper Pot Pinot Noir was kept to a minimum. Apart from a minimal addition of sulphur during the crushing of the grapes and maturation, no additives were used. The wine fermented spontaneously using yeast naturally present on the fruit and in the environment. 40-60% of the grapes were fermented whole bunch, giving the wine a wonderfully natural structure and savoury nuances. Extraction was approached extremely gently with a combination of regular pumping over and manual submerging of the cap, while the wine spent 30 days on the skins. After fermentation was complete, the wine was aged for nine months in a combination of small French barriques to avoid an overly dominant oak character in the wine and to gently round out the structure before all the barrels were blended and the wine was bottled.
