Die Trauben wurden sanft gepresst und natürlich vergoren. Nur der Freilaufsaft wurde in älteren französischen Eichenfässern vergoren, wonach der Wein 10 Monate lang auf der Hefe reifte und anschließend ungeschönt und ungefiltert auf die Flasche gefüllt wurde. Dieser besondere Weinberg liegt am Fuße des Simonsbergs in Stellenbosch. Die Böden bestehen aus Granit und weisen einen hohen Verwitterungsgrad auf. Große Sandsteinfragmente an der Oberfläche führen zu einer groben, gut drainierenden Oberbodenschicht. Der Weinberg wurde 1980 in 300 m Höhe angelegt.
