Unveil the exceptional Thelema Merlot Reserve 2022, a stunning limited release that defines high-end Merlot. With an inviting bouquet, it features ripe cherry, fresh raspberry, and subtle blackcurrant aromas intermingling with cedar, sandalwood, and a hint of baking spices. On the palate, it unfolds a harmonious blend of strawberry and dark cherry flavors, carefully balanced by vibrant acidity, smooth tannins, and a touch of minerality. This Merlot showcases refinement and equilibrium, delivering a sophisticated yet accessible tasting experience.
Die Gärung erfolgt in Edelstahltanks, wobei eine Kombination aus aerativen 'pumpovers' und Pigeage-Techniken verwendet wird, um eine optimale Extraktion von Farbe, Tanninen und Geschmack zu gewährleisten. Nach Abschluss der Gärung wird der Wein von den Häuten abgezogen und in einen Lagertank überführt, um anschließend in Fässer gefüllt zu werden. Die malolaktische Gärung findet in den Fässern statt. Die Weine reifen dort 18 Monate lang, mit 40% neuen französischen Eichenfässern, und es erfolgt in dieser Zeit nur ein Umfüllen. Nach der Verkostung aller einzelnen Partien entscheidet unser Kellerteam über die endgültige Verschnittkomposition, die Fässer werden in den Tanklagerbereich geleert und die Weine für die Abfüllung vorbereitet. Holzreifung 18 Monate im Fass. 40% neue französische Eiche, der Rest in älteren Fässern.
