Indulge in the grandeur of Thelema with the Thelema Cabernet Sauvignon Magnum, beautifully housed in a wooden case. This vintage showcases a symphony of aromas, from blackcurrant leaves to rich coffee beans, culminating in a vibrant, structured mouthfeel. Nuances of leather, bittersweet chocolate, and luscious blackberry grace the palate, underpinned by firm tannins that promise an enduring finish. An exquisite representation of Stellenbosch's terroir and craftsmanship.
Die Gärung erfolgt in Edelstahltanks, wobei eine Kombination aus aerativen 'pumpovers' und Pigeage-Techniken verwendet wird, um eine optimale Extraktion von Farbe, Tanninen und Geschmack zu gewährleisten. Nach Abschluss der Gärung wird der Wein von den Häuten abgezogen und in einen Lagertank überführt, um anschließend in Fässer gefüllt zu werden. Die malolaktische Gärung findet in den Fässern statt. Die Weine reifen dort 18 Monate lang, mit 40% neuen französischen Eichenfässern, und werden während dieser Zeit nur einmal abgestochen. Nach dem Probieren aller einzelnen Parzellen entscheidet unser Kellerteam über die endgültige Cuvée, die Fässer werden in den Lagertank geleert und die Weine für die Abfüllung vorbereitet. Holzreifung 18 Monate im Fass: 40% neue französische Eiche, der Rest in älteren Fässern.
