The Thelema Cabernet Sauvignon 2021, from the esteemed winemaker Gyles Webb, delivers an immersive and sophisticated tasting experience. With alluring notes of ripe blackcurrants, dark chocolate, and a touch of licorice, it captivates the senses. The palate is enriched by beautifully balanced sweet elements of fresh blackberries and concludes with a long, smooth finish. Handpicked, destemmed, sorted, and crushed, the grapes underwent spontaneous fermentation in steel tanks at controlled temperatures of 27°C. After eight days and fermentation completion, the wine was transferred for malolactic fermentation in barriques, where it matured for 18 months using exclusively French oak, 35% of which was new.
