The Survivor Terroir Sauvignon Blanc is a remarkable expression of the renowned Elgin terroir, showcasing aromas of pink grapefruit and passion fruit interlaced with a refreshing, slate-like minerality. On the palate, the wine achieves a perfect balance where freshness melds with a fine yeast texture, leading to a long, satisfying finish.
The wine was fermented in stainless steel tanks, maintaining a temperature of around 13°C over three weeks. After three months on the fine lees, it was racked and sulfured before bottling.
