The Survivor Terroir Chenin Blanc 2025 enchants with a captivating bouquet that unfolds enticing notes of ripe pear and delicate peach blossoms. It achieves an exquisite balance between vibrant fruit and understated oak nuances. On the palate, the wine reveals medium body with a juicy core, culminating in refreshing acidity and a lingering, elegant finish.
Treatment in the cellar
Die Swartland-Trauben wurden zwischen 22° und 23,5° Balling gelesen, wobei die Ernte am frühen Morgen erfolgte, um sicherzustellen, dass die Trauben kühl im Keller ankamen und sofort gepresst wurden. Der Vorlauf- und leichte Presssaft wurde vom Rest getrennt. 50 % des Saftes wurden in Edelstahltanks vergoren. Nach der Beimpfung wurde die Gärtemperatur über drei Wochen bei etwa 12 °C gehalten. Die anderen 50 % des Chenin Blanc durchliefen eine Spontangärung in 400-Liter-Fässern aus französischer Eiche, davon 10 % neu, 30 % Zweitbelegung, 40 % Drittbelegung und 20 % Viertbelegung. Der Wein reifte acht Monate in den Fässern, bevor er verschnitten und abgefüllt wurde.
