Treatment in the cellar
Upon arrival at the winery, the grapes were first subjected to a three-day cold soaking phase before the juice was extracted and pumped over three times a day. The fermentation process took place at a controlled temperature of 16-28°C on the skins and in stainless steel tanks and lasted for a period of 10-25 days. After fermentation was complete, malolactic fermentation and maturation took place with the addition of oak in steel tanks before the wine was bottled for consumption.
