Treatment in the cellar

This award-winning Chenin Blanc from old bush vines is harvested at optimal ripeness, undergoing 6 to 12 hours of skin contact. It ferments slowly with wild yeasts in 2000-liter barrels and concrete eggs. After fermentation, it is transferred to concrete eggs for up to 12 months of aging on the lees.
