Sourced entirely from the original 1964 Bottelary vineyard in Stellenbosch, this Chenin Blanc serves as a sophisticated embodiment of the variety. Das Traubengut für diesen preisgekrönten Chenin Blanc alter Buschreben wurde bei optimalem Reifegrad gelesen und haben zwischen sechs und 12 Stunden Hautkontakt. Der Wein wird für eine langsame Gärung mit wilden Hefen in 2000-Liter-Fässer und Betoneier abgefüllt. Nach Abschluss der Gärung wird der Wein in Betoneier umgefüllt, wo er bis zu 12 Monate lang auf der Hefe reift.
