The Stellenrust 60 Barrel Fermented Chenin Blanc masterfully blends complexity with a harmonious structure. The grape juice was allowed to rest for several days without enzyme additions before being transferred into select barrels, where natural fermentation commenced. This process lasted eight months, followed by an additional month of sur lie aging. The wine matured for nine months in oak barrels (90% French oak and 10% Hungarian oak).
