The Spier Seaward Sauvignon Blanc shines with a bright straw-yellow color and a hint of lime green. Luxurious aromas of freshly squeezed lemon, zesty lime, and fully ripe green figs dominate the bouquet. On the palate, lively notes of passion fruit unfold, enveloped in a refined acidity and pleasant salty minerality, culminating in an invigorating finish.
The grapes were handpicked in the early morning and gently crushed upon arrival at the winery, protected from oxidation by a CO2 layer. Only the free-run juice was used for vinification and left to rest overnight. Fermentation occurred at a controlled temperature of ±12°C. Following fermentation, the wine spent an additional two months on its lees to impart richness and complexity.
