The Spier 21 Gables Cabernet Sauvignon is adorned with a deep ruby color, revealing an aromatic transformation of blackcurrant, soft violets, and fragrant cedar. Gentle hints of fine roast and pencil lead contribute a captivating backdrop. This full-bodied wine boasts a concentrated structure and a luxuriously rich finish, epitomizing the classic Cabernet profile from Stellenbosch's iconic Helderberg mountains.
Hand-harvested berries were meticulously sorted. The fermentation lasted for 24 days in stainless steel tanks. After fermentation, the wine aged for 26 months in 70% new French oak barrels, with only the finest barrels selected for bottling!
