The Simonsig Redhill Pinotage enchants with its deep red appearance, hinting at the intricate aromas within. Savory notes of wild berries, cinnamon, and cedarwood grace the nose, accentuated by a subtle touch of licorice that introduces a captivating complexity. On the palate, the wine reveals ripe raspberry essence, further enhanced by blackberry nuances that impart a woodland richness. Die Trauben wurden mit größter Sorgfalt aus einem einzelnen Buschreben-Weinberg des Guts gelesen und bereits im Weinberg streng selektioniert, sodass nur bestes Lesegut in die Kellerei gelangte. Eine sanfte Entrappung wurde vorgenommen, anschließend wurden 20 % ganze Trauben den offenen Gärbehältern hinzugefügt. Nach zweitägiger Kaltmazeration wurde die Gärung mit einer ausgewählten Hefekultur eingeleitet. Vier Tage lang erfolgten regelmäßige Pigeage-Durchstöße, bevor die Trauben nach insgesamt sechs Tagen auf den Schalen abgepresst wurden. Der letzte Teil der Gärung fand im Tank statt, bevor der Wein direkt ins Fass überführt wurde, um dort den biologischen Säureabbau zu durchlaufen. Anschließend reifte er 19 Monate in 225-Liter-Fässern aus französischer Eiche: 75 % Erstbelegung, 25 % Zweitbelegung. Vor der Abfüllung wurde der Wein dreimal umgelagert.
