The Simonsig Mr Borio's Shiraz 2022 opens with a rich purple hue crowned by a magenta rim. A fragrant bouquet unfolds, showcasing juicy blackberries, blackcurrants, cherries, and ripe plums, subtly laced with violet notes and delicate oak spices. This wine balances floral complexity with a vibrant fruitiness, enriched by smooth tannins that lend both structure and finesse. The lively acidity enlivens the palate, while powdery tannins and soft oak impressions contribute to its generous mouthfeel and layered depth.
Named after Alessandro Borio, the skilled mason who established the first cement tanks at Simonsig, this bold Shiraz reflects the tradition and artistry of Stellenbosch, perfect for leisurely enjoyment.
The grapes were handpicked in the cool morning hours and promptly transferred to the cellar. A limited skin contact phase is allowed for selected batches to maximize fruit expression without losing acidity. After fermentation, 67% of the blend was aged for 16 months in oak, with 90% French and 10% American oak; 15% in second-fill barrels, with the remainder in third and fourth-fill casks.
