The wine features a finale marked by long, soft tannins. This expressive wine showcases a harmonious blend of Syrah (74%), Grenache Noir (11%), Chenin Blanc (6%), Tinta Amarella (5%), Mourvèdre (3%), and Carignan (1%).
Hand-harvested grapes are sorted in small crates during the cool mornings. The grapes undergo de-stemming and gentle pressing into small open fermentation tanks and oak barrels. Fermentation occurs spontaneously with natural yeasts. A maceration time of 5–7 days is followed by a single pressing using a traditional basket press and malolactic fermentation in barrels. Aging occurs for over 20 months in older French oak barrels, with multiple racking for gradual clarification. The wine is bottled by hand, unrefined and unfiltered.
