The Sadie Family Palladius is a remarkable white wine cuvée hailing from South Africa's Swartland region. The grapes for the Palladius were meticulously hand-selected, then pressed in a traditional basket press. The juice flowed directly into clay amphorae and concrete eggs, where it fermented spontaneously without additives, followed by 12 months of maturation in old fudders.
