The Rustenberg Five Soldiers Chardonnay enchants with a powerful aroma of ripe citrus, melon, and peach, accompanied by remarkable minerality and a beautifully integrated oak influence. This Chardonnay is alluringly complex with a long, creamy finish and a solid backbone of balanced acidity.
Originating from the prestigious Five Soldiers vineyard, named for the five towering pine trees that loom over the area, the carefully harvested Chardonnay grapes are magnificently transformed in the cellar. The final product is a bold, full-bodied wine that's delightful in its youth yet offers greater complexity with careful aging that rewards the patient connoisseur.
Das handgelesene Traubengut wurde bei Ankunft in der Kellerei am ganzen Bund gepresst und in Fässern aus französischem Eichenholz mit einer Füllmenge von je 300 Litern spontan vergoren. Spontan bedeutet in diesem Kontext, dass die Fermentierung ausschließlich durch wilde Hefe, die natürlich auf der Frucht und in der Umgebung vorkommt, in Gang gesetzt wurde. Diesem Prozess wurden keinerlei kommerziellen Hefen zugefügt. Nach Abschluss der Gärung reifte der Wein 15 Monate lang in einer Kombination aus 70 % Neuholz und 30 % zweitbelegtem Holz auf der Hefe.
