The Rudi Schultz Dungeons Cabernet Sauvignon 2021 engages the palate with enticing notes of ripe blackberries, herbs, and dark plums, accented by a whisper of aromatic cedar and oak. Its soft character and smooth mouthfeel linger into a lasting, velvety finish. It is recommended to decant the wine a few hours before enjoying. A complex and bold wine for discerning enthusiasts!
Die Trauben wurden komplett entrappt, von Hand sortiert und in offene Tanks aus Edelstahl gepumpt, wo die natürliche Fermentierung ohne Zugabe kommerzieller Hefen einsetzte und nach zehn Tagen im Tank unter drei- bis fünfmal täglichem Umpumpen abschloss. Nach Abschluss der alkoholischen Gärung reifte der Wein acht Tage lang auf der Haut, bevor es in die Presse ging. Anschlieβend reifte dieser erstklassige Cabernet Sauvignon 18 Monate lang in französischen Barriques, von denen 30 % Neuholz und der restliche Anteil zweit- sowie drittbelegtes Holz ausmachten.
