The Richard Kershaw The Smuggler's Boot Pinot Noir captivates with an enchanting bouquet of ripe strawberries, accented by savory spices and a hint of aromatic star anise. On the palate, this Pinot reveals a superbly juicy and decadent profile, featuring a broad spectrum of flavors, well-integrated acidity, supple tannins, and a velvety mouthfeel. Enticing notes of fragrant strawberries, cherries, fresh ginger, dark chocolate, and a delicate touch of licorice embrace the senses, culminating in a lengthy, smooth finish.
The hand-harvested grapes were meticulously sorted and destemmed before being placed whole into open fermenters. After a three-day cold soak, spontaneous fermentation commenced without any commercial yeasts, led solely by the native wild yeasts present. The berries spent 10 to 16 days on skins, with free-run wine directed into a mix of 50% French barrels (10% new oak) and 50% breathable egg-shaped vessels. Remaining pomace was pressed using a traditional basket press. Malolactic fermentation started but was gently halted with sulfur before completion, and the wine was racked off the lees. It aged for 11 months in French barrels and was lightly filtered before bottling.
