Richard Kershaw The Smuggler's Boot Chardonnay presents a delightful interplay of aromas, featuring hints of spice, toasted bread, citrus, and luscious stone fruits. The palate opens with vibrant freshness, illuminated by notes of ripe apples, forelle pears, yellow peaches, and a touch of lemon zest. A smooth core of fruit melds with oatmeal and a hint of spices, beautifully filling the mid-palate. The wine's complex structure and impressive persistence make this Chardonnay a remarkable experience.
The grapes were handpicked and pressed whole bunch. Half of the juice was aged in French oak barrels (15% new wood), while the remainder was placed in breathable plastic eggs. The unclarified juice was fermented naturally, with 70% achieving the desired dryness. The other portion was inoculated with the innovative wild 'cultivated' yeast strain 'Saccharomyces Paradoxis'. After fermentation, the wine matured on its lees for eight months, undergoing regular bâtonnage to impart a delightful creamy mouthfeel reminiscent of brioche.
