Während der Gärung im offenen Stahltank wurde der Saft für fünf Tage drei bis fünfmal täglich über die Schalen gepumpt und die Maische im Saft nach unten gedrückt. Die malolaktische Gärung erfolgte bereits in französischen 225 L Barriques, in denen der Wein für 12 bis 14 Monate reifte, ehe er verschnitten und abgefüllt wurde.
