Die Chenin-Trauben wurden am ganzen Bund gepresst, woraufhin der Saft einer zweitägigen Ruhephase unterzogen wurde, bevor er aufs Fass gefüllt wurde. Die alkoholische Gärung fand auf natürliche Weise, durch die in der Umgebung vorkommende Hefe statt und dauerte zwischen acht und zehn Wochen lang an. Die malolaktische Gärung wurde durch die kühl geregelte Fermentierungstemperatur unterbunden. Der Wein reifte nach Abschluss der Gärung 9 Monate lang im Fass auf der feinen Hefe und ruhte nach dem Verschneiden der Fässer noch einen weiteren Monat, bevor der Wein auf die Flasche gefüllt wurde. Die zweit-, dritt- sowie viertbefüllten Fässer für den Ausbau dieses Weins stammen alle aus kunsthandwerklichen Böttchereien des Burgund, wo man für die Herstellung Allier- und Vosges-Eiche verwendete.
