Handgeerntet und dreimal verlesen, wurde das Traubengut angequetscht und fünf Tage lang auf der Haut gelassen. Nach Abschluss der Fermentierung ging es in die traditionelle Korbpresse. Die malolaktische Fermentierung fand in Stahltanks statt woraufhin der Wein 18 Monate lang in französischen Barriques reifte (25 % Neuholz).
