Treatment in the cellar

Die Trauben für den Protea Merlot wurden mit großer Sorgfalt und jeder Menge Know-how per Hand gelesen. Bei Ankunft in der Kellerei wurde das Traubengut entrappt und angequetscht, woraufhin der Saft in 10.000 l Fässer aus französischer Eiche und in 10.000 l Tanks aus Edelstahl gefüllt wurde. Die Gärung auf der Haut bei geregelten 26°C dauerte 15 Tage lang an. Anschließend reifte der Wein 12 Monate in Kontakt mit französischer Eichenholz-Staven.
