The Protea Chardonnay captivates with a lively bouquet of Mediterranean peaches, aromatic lemon zest, and orange blossoms, enhanced by mandarin and stone fruits. All grapes for the Protea Chardonnay were destemmed and crushed, then left to rest overnight. The grapes from various vineyard parcels were fermented separately with selected yeast cultures. A small portion was matured in new French oak to impart complexity and structure, while the remaining wine spent a month on the lees before blending and bottling.
