Information about "Pilgrim Sauvignon Gris 2025"

The Pilgrim Sauvignon Gris showcases a pale golden tint with a subtle green glimmer, indicative of its brief skin contact and early harvest. This wine captivates the nose with aromatic intensity, featuring notes of passion fruit, guava, lychee, and ripe gooseberry, complemented by hints of fynbos herbs and an underlying minerality. On the palate, it reveals richness, structure, and a mouth-coating texture that emphasizes the pure fruit essence typical of the Sauvignon varietal. The short skin maceration provides a soft tannin framework, harmonizing with the vibrant fruit character. A delicate phenolic touch introduces freshness and excitement, leading to a lengthy, satisfying finish that enhances the overall experience.

This youthful Sauvignon Gris represents a fascinating interpretation of a varietal that is still establishing its presence in South Africa, showcasing exceptional promise as both a standalone offering and an important blending component. Through the focused vinification of this small batch, we strive to unlock its full potential and gain insights into its evolution within the local terroir.

Treatment in the cellar

Following the harvest in the cool morning hours, the grapes were destemmed and left on the skins for approximately three days in a cool room. This gentle, cool extraction facilitated the development of the aromatic precursors typical of Sauvignon Gris—passion fruit, guava, and tropical flowers—without excessive phenolic extraction.

After three days, natural fermentation commenced, and the grapes were pressed to separate the skins and stems from the juice. The fermenting must was then transferred to a single small 150-liter French oak cask—a very neutral, old barrel that solely served as a fermentation vessel, imparting no wood influence. The wine completed its natural fermentation there and was later bottled with minimal intervention to preserve its purity and original character.
