Following the harvest in the cool morning hours, the grapes were destemmed and left on the skins for approximately three days in a cool room. This gentle, cool extraction facilitated the development of the aromatic precursors typical of Sauvignon Gris—passion fruit, guava, and tropical flowers—without excessive phenolic extraction.
After three days, natural fermentation commenced, and the grapes were pressed to separate the skins and stems from the juice. The fermenting must was then transferred to a single small 150-liter French oak cask—a very neutral, old barrel that solely served as a fermentation vessel, imparting no wood influence. The wine completed its natural fermentation there and was later bottled with minimal intervention to preserve its purity and original character.
