The Pilgrim Grenache Gris captivates with its striking rose-gold hue, perfectly reflecting the natural characteristics of this noble grape variety. On the nose, it reveals bright, aromatic notes with a delicate fleeting sweetness that quickly evolves into layers of stone fruit, pineapple, peach, and ripe pear. A subtle mineral component adds freshness and tension to the bouquet. On the palate, the wine is rich, structured, and vibrantly alive; fresh, ripe fruits spread vigorously, buoyed by a lively acidity that elegantly lingers. A distinct mineral core ensures precision, while a gentle tannin structure from skin contact provides grip and depth. This results in a wine of remarkable balance, finesse, and length—a truly captivating debut.
Die Trauben blieben insgesamt sieben Tage auf den Schalen – zunächst drei Tage unter kühlen Bedingungen zur sanften Farbauslaugung, danach vier Tage langsamer, natürlicher Gärung bei niedriger Temperatur, was die aromatische Frische und Tiefe bewahrte.
Anschließend wurde der Most gepresst und in alte französische Eichenfässer überführt, in denen die natürliche Gärung gemächlich über rund drei Wochen weiterlief und einen leicht erhöhten Restzucker ergab. Der Ausbau erfolgte bewusst minimalistisch: keine Enzyme, keine Zusatzstoffe, keine Schönung. Nach Abschluss der Gärung reifte der Wein ruhig auf der Feinhefe, um Struktur und Mundgefühl zu verfeinern. Ziel war es, die sortentypische Reinheit und die mineralische Präzision des Grenache Gris unverfälscht zum Ausdruck zu bringen.
