Set against the backdrop of isolated vineyards, these Carménère vines boast breathtaking views across Stellenbosch and the gentle hills towards Cape Town, their roots penetrating deep into the decomposed reddish-brown granite soils of their homeland.
Die Gärung begann mit 20 % ganzer Trauben in der Gärung. Die natürliche Gärung verlief schnell, dies dauerte etwa zwei Wochen.
Nach der Gärung wurde der Wein recht schnell abgepresst und in ein kleines Fass gefüllt.
Während der nächsten 12 Monate der Reifung wurde der Wein kontinuierlich bewertet, da er in Südafrika noch nicht sehr bekannt war. Nach 12 Monaten zeigte sich eine gute phenolische Entwicklung und der Wein wurde in Flaschen abgefüllt.
