The Pilgrim Bastardo captivates with its vibrant ruby color in the glass. This vintage exudes an incredibly rich bouquet that mirrors the sophistication of a classic Hermitage, with alluring spiciness and herbal undertones complemented by chamomile and freshly crushed pepper. Treatment in the cellar
66 Reben tragen nicht viel Frucht, daher wurde dieser Jahrgang in einer Plastikwanne vergoren. Es wurde keine bestimmte Technik zum Sortieren, Quetschen, Pumpen oder Transportieren der Trauben verwendet. Stattdessen wurden die Trauben am ganzen Bund in die Wanne gegeben und mit bloßer Beinkraft gestampft. Die Zugabe einer kleinen Menge SO2 war wie immer nötig.
Die natürliche Gärung verlief schnell und tägliches Unterstoßen des Tresterhuts war an der Tagesordnung. Dies dauerte etwa eine Woche. Der Wein wurde relativ schnell nach der Gärung gepresst und in ein kleines Fass gefüllt, wo er 14 Monate reifen durfte. Da dieser Wein nach Abschluss der Reifung nicht gefiltert wurde, kann sich eine gewisse Menge an Sedimenten am Flaschenboden bilden, was völlig natürlich ist.
