The Opstal The Barber Semillon captivates the nose with an alluring bouquet of fresh citrus, beautifully complemented by notes of ripe nectarine and the elusive spice of fynbos. On the palate, it reveals a sophisticated interplay of flavors, including zesty lime, hay, and dried herbs, layered with hints of apricot and beeswax. This outstanding expression reflects the unique characteristics of alluvial soils, delivering a remarkable freshness and a lingering saline finish.
Nach Abschluss der alkoholischen und malolaktischen Fermentierung reifte der Wein zehn Monate lang in 225 L Fässern aus französischer Eiche. Der Wein fermentierte spontan, d.h. dass für die Fermentierung keine kommerziellen Hefen zum Einsatz kamen. Lediglich die in der Umgebung und auf der Frucht natürlich vorkommende Hefe setzte die Gärung in Gang und so entwickelt sich dieser Semillon zu einem wahrhaft terroirgtriebenen Wein.
