The Opstal Chenin Blanc captivates with its intriguing interplay of invigorating freshness and layered complexity. Alluring aromas of ripe pear, pineapple, and lively citrus beautifully meld with delicate spices, a touch of thyme, and a delightful yeast hint. This exceptional Chenin, derived from Opstal's finest grapes, reveals the remarkable terroir-driven minerality from diverse vineyards.
Das Traubengut wurde komplett entrappt, gequetscht und nach acht Stunden auf der Haut abgepresst. Die spontane Fermentierung fand zu 75% in großen Fässern aus französischer Eiche sowie zu 25% in Tanks aus Edelstahl statt. Spontane Fermentierung bedeutet hier, dass für die Fermentierung keine kommerziellen Hefen zum Einsatz kamen. Lediglich die in der Umgebung und auf der Frucht natürlich vorkommende Hefe setzte die Gärung in Gang. Nach Abschluss der alkoholischen sowie malolaktischen Gärung reifte der Wein acht Monate lang sowohl im Fass als auch im Tank auf der Hefe, bevor die Weine verschnitten und auf die Flasche gefüllt wurden.
