Das Traubengut für den West Coast Sauvignon Blanc wurde bei Ankunft in der Kellere zunächst mit großer Sorgfalt sortiert und ausgelesen und anschließend gequetscht. Der Saft wurde unter Zugabe von neutraler Hefe bei einer kühlgeregelten Temperatur in Tanks aus Edelstahl vergoren und verbrachte anschließend einen ausgedehnten Zeitraum auf der Hefe, um eine schöne Textur sowie Viskosität im Wein zu erhalten.
