The Nederburg Private Bin Two Centuries Cabernet Sauvignon pours a deep ruby red, captivating the senses from the first glance. The palate is rich and complex, offering a silky mouthfeel complemented by subtle power and concentrated flavors. Hailing from the esteemed Private Bin Collection, known for its limited releases, this Cabernet Sauvignon embodies a fine balance of restraint and strength, showcasing layers of elegance alongside robust character. Its coherence, complexity, and rewarding finish make it an exceptional choice for aging.
The grapes were harvested at optimal ripeness, with each block vinified separately. Hand-sorted and gently crushed in stainless steel tanks, a cold maceration took place for two days at 10°C with daily pump-overs. The juice was inoculated and fermented at 27-24°C. Post-fermentation, the wine underwent malolactic fermentation in 100% new French oak barrels, aging for 29 months before careful selection and preparing for bottling.
