Das Traubengut wurde am frühen Morgen per Hand gelesen und dem Saft wurde keine zusätzliche Hefe gegeben, sondern nur die natürliche, wilde Hefe leitete die Gärung ein. Der Wein ruhte sechs Monate auf der feinen Hefe und reifte noch weitere elf Monate in älteren 500L Fässer aus französicher Eiche
