The Mullineux Olerasay No. 5 Straw Wine showcases an exceptional mixture of richness, vibrancy, and freshness. Its aromatic profile reveals notes of sun-dried apricots, Fynbos honey, and salted marzipan, leading into an intensely concentrated yet exquisitely balanced palate. The delightful acidity harmonizes beautifully with the lush fruit concentration, unveiling layers of complexity that set this dessert wine apart. The beautifully integrated sweet, ripe fruit is elevated by a notable acidity, ensuring a lively and refreshing experience despite the natural sweetness. An incredibly long and vibrant finish embodies the essence of its intricate Solera blend derived from seventeen vintages spanning 2008 to 2024.
Harvesting grapes at optimal ripeness and drying them outdoors in airy conditions enhances not only sugar and aroma concentration but also the vibrant acidity essential for a balanced straw wine. After several weeks of drying, the grapes are gently crushed and pressed into 225-liter barrels, where a long, slow, natural fermentation occurs. Each year, this fermentation naturally halts after 8 to 12 months, achieving a harmonious balance.
The fractional blend of OLERASAY No. 5 incorporates vintages from 2008 to 2024, displaying incredible complexity with unstoppable length and freshness.
