This single varietal Chenin Blanc hails from a 41-year-old bush vine vineyard in Stellenbosch, thriving on slate soils. The grapes were handpicked in small boxes and refrigerated overnight. The next day, carefully selected whole bunches were pressed, and the juice was left to settle overnight before being transferred to old French 400-liter oak barrels for fermentation. Once fermentation was complete, the wine aged on the lees for 10 months with regular batonnage.
