This 100% Chenin Blanc is sourced from a single vineyard of 43-year-old bush vines in Stellenbosch, growing on slate soils.
Dieser sortenreine Chenin Blanc stammt aus einem einzigen Weinberg aus 41 Jahre alten Buschreben in der Region Stellenbosch, die auf Schieferböden gedeihen. Das Traubengut wurde in kleine Traubenkisten gelesen und über Nacht in einer Kühllagerung aufbewahrt. Am folgenden Tag wurden die Trauben nach sorgfältiger Auswahl am ganzen Bund gepresst und der Saft über Nacht abgesetzt, bevor er zur Fermentierung in alte französische 400-Liter Eichenfässern gefüllt wurde. Nach Abschluss der natürlichen Gärung reifte der Wein 10 Monate lang auf der Hefe, die regelmäßig auf- und untergerührt wurde (batonnage).
