Miles Mossop showcases with Chapter One a prized offering: 100% Cinsault sourced from a select vineyard in Swartland. This grape is lauded for its vibrant cherry-red hue and is crafted with a keen focus on varietal purity.

The aromatic profile reveals classic notes of rose petals, strawberries, and cherries interlaced with subtle hints of dried herbs. On the palate, fresh strawberries and ripe cherries are enriched by a delicate touch of rosewater, culminating in a graceful, dry finish with refined tannins.

Treatment in the cellar The grapes were harvested on the 14th March and placed in a cold store overnight. After bunch sorting 50% of the whole bunches were loaded into the tank with the remainder of the fruit destemmed and crushed on top. After a 5-day cold soak the fermentation started spontaneously. The wine spent a total of 23 days on the skins. After which it was drained and pressed to a concrete egg for malolactic fermentation.
