The Lismore Chardonnay 2021 stands out with its exceptional crafting, reminiscent of classic Burgundy Chablis. Intense citrus aromas harmonize with heavenly hints of nougat, honey, and jasmine blossom. This diversity is anchored by a pronounced minerality and lively acidity, leading to a long finish enhanced by gentle oak undertones.
Die Trauben wurden bei optimaler Reife gelesen und am ganzen Bund gepresst, wobei der Saft langsam mit einer Rate von 600 Litern pro Tonne extrahiert wurde. Der Saft wurde 48 Stunden kalt ruhen gelassen, vom Sediment abgeschöpft und für die Gärung in ältere Burgunderfässer mit Füllmengen von 225, 300 und 500 Litern abgefüllt. Nach Abschluss der Gärung reifte der Wein noch weitere zehn Monate weiter im Fass. In diesem Jahrgang wurden 5% neue französische Eiche verwendet.
