The Lismore Chardonnay 2021 stands out with its exceptional crafting, reminiscent of classic Burgundy Chablis. Intense citrus aromas harmonize with heavenly hints of nougat, honey, and jasmine blossom. This diversity is anchored by a pronounced minerality and lively acidity, leading to a long finish enhanced by gentle oak undertones.
The grapes were handpicked at optimal ripeness and pressed whole cluster, with juice extracted slowly at a rate of 600 liters per ton. After a 48-hour cold settling, the juice was racked off sediment and transferred to used Burgundy barrels of 225, 300, and 500 liters for fermentation. The wine then matured for an additional ten months in barrel, including 5% new French oak this vintage.
