Die Trauben für den Kleine Zalze Cellar Selection Sauvignon Blanc stammen aus fünf verschiedenen Anbaugebieten des Western Cape: Stellenbosch, Darling, Durbanville, West Coast und Walker Bay. Die Fermentierung des Traubenguts fand temeperaturgeregelt in Tanks aus Edelstahl statt. Nach Abschluss der Gärung reifte der Wein noch weitere vier Monate auf der Hefe, bevor er zum fertigen Genuss auf die Flasche gefüllt wurde.
