The Kershaw Clonal Selection Elgin Pinot Noir enchants with a bouquet that merges floral accents with exceptional freshness. Its fine, powdery tannins and juicy texture embrace the palate, revealing delicious flavors of black cherries, pomegranate nuances, and subtle hints of dark chocolate and toast. This rarity hails from South Africa's cooler Elgin region, where just 5,850 bottles of this premium Pinot Noir have been crafted, each uniquely labeled.
The grapes for this exceptional Pinot Noir were hand-harvested early in the morning and carefully sorted in small baskets before undergoing destemming. The destemmed grapes were fermented as whole berries in small open fermenters after a 3 to 4-day soaking phase. Following 10-16 days of 'punch-downs' on the skins, the wine was transferred into barrels where malolactic fermentation took place. The wine was separated from the malolactic yeast and returned to the barrels for 11 months of maturation in artisanal barrels from Burgundy and the Rhône region, comprising 12% new oak and 88% second and third fill wood.
