Iona Sophie Te'Blanche showcases the vibrant spirit of Elgin with its aromatic bouquet and crisp structure. Die verschiedenen Weinberge werden über einen Zeitraum von zwei Wochen von Mitte März bis Anfang April geerntet, wobei der Saft einige Stunden nach der Ernte sicher in den eigenen Tanks gelagert wird. Der verbleibende Saft, der immer noch von guter Qualität ist, und ein schönes fruchtiges Profil aufweist, wird in Stahlfässern kühl vergoren.
