Um die gewünschte Farbe zu erzielen, wurde der Großteil des Saftes direkt nach dem Pressen abgezogen, wobei einige Trauben bis zu zwei Stunden mit der Haut in Berührung kamen und bei 14-15°C vergoren, um die feinen Aromen und Geschmacksstoffe zu erhalten.
