The Iona One Man Band exemplifies a distinctive array of cool, peppery spices integrated with sturdy tannins and aromas of blackberries and dark cherries. It's based primarily on Petit Verdot, driven by 53% Syrah, Nebbiolo, Mourvèdre, and a whisper of Viognier. Invigorating mint and herbal nuances intertwine with mineral notes, reminiscent of Fynbos and fennel. On the palate, expect a balanced fusion of mint, raspberry, plum, and black cherry, supported by textural tannins that impart depth and structure.
Die Rotweinvinifikation erfolgte auf sehr traditionelle Weise. Nach der Handlese wurden die Trauben entrappt und auf einem Vibrationstisch sortiert, ohne dass sie gequetscht wurden. Nachdem die wilde Gärung begonnen hatte, wurde der Tresterhut zweimal täglich sanft untergestoßen, um die gewünschte Extraktion zu erreichen.
Nach der Gärung erfolgte eine verlängerte Mazeration; die Weine wurden regelmäßig probiert, um den Extraktionsgrad zu bewerten und den richtigen Zeitpunkt zum Pressen zu bestimmen. Nach dem Abpressen durchliefen die Weine eine spontane malolaktische Gärung im Fass, wo sie 12-16 Monate in 500-Liter-Fässern aus französischer Eiche reiften, wobei 25 % der Fässer neu waren.
