Located at 420 meters above sea level in the picturesque Elgin Valley, with stunning views of the Atlantic, Andrew Gunn established Iona in the cooler regions of the Cape. The Iona Fynbos Chardonnay offers a lush, aromatic profile featuring a minerality that harmonizes beautifully with stone fruit and citrus notes, alongside subtle hints of orange, yeast, and wax. Its palate reveals a generous fruit character complemented by well-integrated acidity.
Viticulural practices follow organic and biodynamic methods, emphasizing soil health. The extended growing season allows for harvests that occur up to two months later than in Stellenbosch, resulting in wines rich in complexity and an elegantly refreshing style.
The grapes were hand-picked and spent a night in the cooling room before being pressed whole. No clarification enzymes were used, allowing for a juice rich in solids. This wine was fermented 100% wild in selected 228-liter and 300-liter French oak barrels (20% new, with the remainder being second, third, and fourth-fill barrels). The wine was aged for 12 months on the lees, with 20% undergoing malolactic fermentation and no battonage. Afterward, the wines were blended and clarified, stabilizing naturally for three months before bottling.
