The Iona Elgin Highlands Wild Ferment Sauvignon Blanc represents a refined and layered interpretation of the iconic Iona Sauvignon Blanc. This Fumé white wine undergoes fermentation with wild yeasts in seasoned oak barrels, offering an impressive complexity and finesse. Its vibrant nature is characterized by subtle bitterness, a spicy, yeast-driven structure, and intricate notes of aromatic spices, delicate seaweed, and pink grapefruit, all complemented by a whisper of salinity on the finish. This meticulously crafted Sauvignon Blanc unfolds in multiple dimensions: it is mineral-rich and salty with hints of black currants and white stone fruits. The palate reveals a rich texture culminating in a lingering, vibrant finish. This dry vintage marries lush fruit with harmoniously integrated natural acidity, resulting in an engaging composition.
The grapes were hand-harvested and pressed whole bunch. The juice was clarified for 12 hours before being transferred to 500-liter French oak barrels (second to fourth fill). Spontaneous fermentation commenced, with temperatures maintained between 18-22°C. The wine aged in barrels for 11 months before being racked into stainless steel tanks for blending. It then rested for an additional three months in tank, naturally clarified, stabilized, and lightly filtered before bottling.
