With a gentle straw color, the Idiom Bianco di Stellenbosch entices the senses with a captivating bouquet of aromatic lime zest. Its elegant palate delivers delightful layers of green melon, pear, citrus zest, and stone fruits. This remarkably fresh wine showcases exquisite structure and balance, representing a superb example of premium South African Pinot Grigio.
The grapes for this Pinot Grigio were stored overnight in a cooling chamber before being destemmed and crushed for pressing. The first press juice was kept separate from the subsequent juice. After a three-day resting period at 11-14°C, the juice was inoculated with a carefully selected yeast culture. Fermentation occurred at a constant 14°C and lasted around three weeks. Prior to bottling, the wine was lightly refined and filtered.
