Destemmed and crushed, fermented in open steel tanks with native and wild yeasts at controlled temperatures of 26° to 30°C. Daily pump-overs maximize extraction during fermentation. Post-fermentation, the wine was racked without pressing the skins and aged for ten months in large oak barrels, enhancing the Pinotage’s tannin structure and complexity.
