Treatment in the cellar

Post-harvest, the grapes were meticulously sorted, de-stemmed, and gently crushed. Fermentation occurred at controlled temperatures between 12 - 14 °C in stainless steel tanks, utilizing a blend of different yeast strains. Following fermentation, the wine matured for two months in older oak barrels. During this period, fine lees contact enhanced its complexity while preserving its fresh and fruity character.
