The Ernie Els Signature 2021 reveals deep ruby tones, captivating at first glance. On the palate, it boasts a rich blend of dark, ripe fruits complemented by whispers of cinnamon and other spices. The interplay of cassis and cherries embraces notes of cocoa, vanilla, and ripe plums, reminiscent of a lavish Christmas cake. Secondary aromas of thyme and tobacco add complexity, along with subtle hints of Fynbos. The wine's well-rounded tannins create a velvety sensation, delivering elegance fused with power.
All grapes are sourced from Ernie Els Wines, situated on the warm northern slopes of the Helderberg region in the Stellenbosch appellation, providing a full-bodied experience with beautifully integrated fruit tannins that culminate in a long, sumptuous finish.
The grapes were harvested early in the morning, meticulously sorted, and destemmed. Fermentation took place in open stainless steel fermenters, followed by 18 months of maturation in French oak barrels (50% new). A small portion (15%) aged for eight months in terracotta amphorae.
