Forged from a blend of passion and meticulous care, the Eikendal Cabernet Sauvignon 2022 unveils a delightful medley of ripe berries, dark chocolate, delicate spices, and a whisper of pencil lead. Showcasing a sophisticated structure, the wine's silky tannins and remarkable fullness render it an indulgent experience. Das handgelesene Traubengut wurde bei Ankunft in der Kellerei umgehend auf 1°C runtergekühlt und Beere für Beere für den weiteren Produktionsverlauf handverlesen. Nach einer 14 Tage langen Kaltquellphase fand die langsame und natürlich spontane Gärung statt, welche 40 Tage lang andauerte. Die malolaktische Gärung fand spontan und natürlich im Fass statt. Anschließend reifte der Wein 12 Monate lang in maßgeschneiderten Fässern aus dem Burgund (Pierre du Bourgogne) mit anschließend sechs weiteren Monaten Reifezeit in der Flasche.
